Starting my boys off right with a good amount of protein first thing in the morning is essential, so I love coming across new ways to prepare eggs. And of course, the easier the better, which is exactly the case with these egg cups. They take no more than a few minutes to put together and only 10ish minutes in the oven (depending on how cooked you like your yolk). On Saturday mornings they are fantastic topped with homemade hollandaise sauce and alongside a bagel or toast.

– muffin liners (my favorite are the parchment paper ones)

– eggs

– thinly sliced deli meat (look for brands with no added chemicals, preservatives, no nitrates and no smoke flavor)

– green onions

– salt & pepper

Set over to 350 degrees. Line your muffin tin with parchment paper muffin liners. On top of that, line each with a piece of meat making a little nest. Next, crack an egg on top and sprinkle with chopped green onion and salt and pepper. Place in 350 degrees oven for about 10-15 minutes or until your egg is done the way you like it.
