In The Kitchen: A Quick Breakfast or Snack Idea // Vegan Overnight Oats Ready To Eat In 10-20 Minutes

There’s a million overnight oatmeal recipes floating around pinterest but I thought I’d share my favorite one that my kids will eat that’s dairy free and not made with almond milk. No matter how hard I try I just cannot get used to almond milk!

This recipe doesn’t really need to sit overnight to be ready in time for breakfast. I love my chia seeds a little bit crunchy and my rolled oats with a chewier texture (rather than mushy) so allowing this to sit for 10-20 minutes is perfect for me!

  • 1 cup old fashioned rolled oats
  • 1.5 cups coconut milk (I prefer Silk Original Coconut Milk)
  • 1/4 cups chia seeds
  • 1 ripe banana
  • 1 tsp cinnamon

  • Mash your banana then mix all ingredients together in a glass container. Allow to sit for 10-20 minutes or overnight if you prefer a softer consistency.

You can add a tiny bit of maple syrup and hemp hearts and warm in the microwave if you prefer a hot breakfast.
