zucchini bread

Truth? I've never wanted to make zucchini bread before. Dense, gummy, undercooked veggie spice cake was all I could picture  pulling out of my oven. But friends this one is a winner. It's light on the flour, not overly spicy, doesn't have a vegetable taste and my kids won't stop asking for more. This weekend, which was unusually warm,  proved to be pretty chill for all of us. Lots of lazing around (with the little boys getting the comfiest spot in the house after kicking mom and dad out of course), lots of one on one time for all and plenty of fresh air. I'm not a huge fan of nut-free baking but I hate standing in front of my pantry while I'm packing my son's lunch for preschool feeling terrified that I'll accidentally send him to school with a cookie I'd forgotten I added nuts to then BAM! I'm that mom that put the child that's allergic to nuts at risk. It's hard though! Nuts are such an easy way to sneak in some healthy fats and my children love them. Walks at 8:15am because my boys' feet hit the flooring running full tilt before the sun rises lately. I grab my mug of coffee and we go. Here we are on an adventure to find cattails which of course turned into weapons. Valentine's. All by himself with a little bit of help from daddy. I saw this tutorial floating around on pinterest and decided to make one for my boys to warm up to when they come in from playing out in the snow. However, turns out it can be transformed into a weapon (is there anything that a 4 year old boy can't turn into a weapon??) so I quickly called dibs and have been popping it in the microwave throughout the day for myself!
